Parsley, sage, rosemary and thyme
Baked Samosas
Ingredients:

1 small cauliflower

2 tablespoons canola oil

1/2 tbspn. cumin seed

1 small clove garlic (minced or crushed)

2 cups frozen or fresh peas

1 teaspoon. ground cumin

1/2 teaspoon ground ginger
-
1/2 tbspn. salt
-
1/2 teaspoon cayenne pepper

1/4 teaspoon all spice
-
1.4 teaspoon cinnamon

1/2 tbspn. ground coriander
Dough
-
4 tbspn oil
-
2 cups unbleached or whole wheat pastry flour

1/2 cup warm water
Steps

Chop cauliflower in small peices. In a frying pan, heat oil and add cumin seed; when browned,add garlic. Turn down heat to medium and add cauliflower.Two minutes later, add peas. Add salt and remaining spices. Cook covered until mixture is quite soft and somewhat dry.

To make dough, mix oil and flour together with your hands until it reaches a cornmeal consistency. Add warm water and gently knead for about ten minutes.

Form small balls and roll out to four inch circles on a floured surface. Put some filling in each circle and fold it over and press edges closed with a fork.

Bake until golden brown in colour.
