Scarborough Fare
Parsley, sage, rosemary and thyme
Chocolate Chip Loaf
This is a little variation of the Cinnamon Spice Bread that I posted earlier. I used orange extract since I didn't have any oranges on hand. But feel free to use actual oranges if you have any. The ingredients are basically the same except I didn't use any cinnamon.
-
2/3 cup sugar
-
2 cups flour
-
1 tbsp baking powder (unless you're using self-raising flour, then if which case you don't need any baking powder)
-
1/2 tsp salt
-
1 egg
-
1 cup milk (1 cup greek yogurt works beautifully too)
-
1/3 cup vegetable oil (I've used olive oil and canola oil in the past and each time turned out well)
-
1/2-1 cup chocolate chips
-
1 tsp orange extract
-
1 tsp vanilla extract
for topping
-
1/2 cup sugar
-
1/2 cup oats (I used 1 minute oats in this case) (optional)
-
1/4 cup or so chocolate chips (you can use more or less depending on how much was used in the batter)
Instructions
-
preheat the oven to 350F. Lightly grease a 9"x5" in. loaf pan. In a large bowl, combine flour, baking powder (if using), salt and 2/3 cup sugar. Add egg, milk, oil, orange and vanilla extracts as well as the chocolate chips.
-
Stir until just moistened. Pour half of the batter in the pan.
-
Sprinkle half of the sugar/oats/chocolate chips mixture over batter. Pour the rest of the batter into the pan followed by the remaining sugar topping.
-
Bake in preheated oven for 45-50 minutes.
-
Let cool for 10 minutes before remoivng to wire rack to cool completed.
