Ginger Almond Sugar Cookies

 

Ingredients

 

  • 1/2 cup sugar

  • 1/2 cup olive oil

  • 2 tbsp Almond Milk

  • 1 cup flour

  • 1 1/2 baking powder

  • 1-1/2 tsp freshly grated ginger

  • 2 tbsp honey

  • handful of blanched sliced almonds plus more for decorating

 

Instructions
  1. preheat oven to 350 degrees Farenheit

  2. combine olive oil and sugar in a bowl. 

  3. add ginger, honey and milk to oil/sugar mixture.

  4. combine salt, flour, almonds, and baking powder in a separate bowl.

  5. combine the dry and the wet ingredients.

  6. form 12 equal-sized balls, flatten to about 1/2 to 2/3 inch thickness. Add the rest of the almonds on top to decorate.

  7. Bake for 8 to 10 minutes.
